Ingredients
1/2 box shells (about 20)
8oz ricotta cheese
1/2 cup of formaggio trio (Parmesan, asiago, Romano) + more for on top
1 cup italian blend shredded cheese
1/2 tsp kosher salt
1/4-1/2 tsp pepper
1 tsp dried parsley
handful fresh basil, snipped
1/2 tsp fresh oregano, dried
24oz jar of sauce
Boil shells as directed on box. Drain. Let cool a bit to be handled.
Mix cheeses, herbs, salt and pepper.
Preheat oven to 400. Pour a bit of sauce in a 9x13 pan to cover the bottom. Spoon cheese mixture into shell. Place shell opening side up in to pan. Repeat until all shells are stuffed. Pour remaining sauce on top of shells. Sprinkle a handful or so of formaggio cheese on top of sauce. Cover with tinfoil. Bake for 30-35 minutes.
