Cobb Salad

Ingredients

grilled chicken
avocado
smoked bacon
roasted potatoes 
tomato
hard boiled egg
blue cheese ... or goat cheese or feta cheese

Cut potatoes into bite size pieces. Spread single layer on cookie sheet. Drizzle EVOO over with salt and pepper. Roast in air fryer at 400˚ for 25 minutes ... or in oven at 425˚ for 25 minutes.

Put all ingredients into bowl. Drizzle with EVOO and salt or balsamic/flavored balsamic.

Brisket Melts

Ingredients

leftover brisket
onion, sliced and sautéed
texas toast
cheddar slices
gruyere sliced
smoked gouda slices
pickles, optional

On a heated panini press, add bread topped with cheddar and gruyere cheese slices, brisket, onions, smoke gouda slices. Cook until heated through and cheese is melted.

On the side, make or heat up frozen fries with salt, pepper, garlic powder, and paprika. Once baked, top with green onions and/or chives.

Chicken Salad for Sandwhiches

Ingredients

2/3 c chicken
6 green onions, chopped
minced garlic
1/3–2/3 c chopped celery
1/2 c sliced almonds
1/3 c dried cranberries

Dressing

1/2 c mayo
4 oz cream cheese
2 tbsp lemon juice
1 tbsp brown sugar
1/2 tsp salt

Mix top ingredients together in a large bowl. In a smaller bowl, mix ingredients for dressing. Then, add dressing mixture to chicken mixture. Refrigerate for a couple of hours before serving.
